I’m obsessed with KitchenAid’s Vegetable Sheet Cutter. Because I’m gluten-free, I’ve been a fan of spiralizing for years as a way to replace pasta. But the Vegetable Sheet Cutter takes it to a whole new level! Today I’m giving you an overview of the product and sharing my favorite Vegetable Sheet Cutter recipes.

Last year I had the privilege to check out a prototype KitchenAid product. Something that would cut vegetables into flat sheets they told me. Hmm, I thought to myself. My interest was definitely piqued.

KitchenAid knew I was a healthy, gluten-free food blogger and a massive fan of spiralizing. I don’t typically buy gluten-free pasta made from gluten-free flours. They’re just not products I stock in my pantry and I’d much prefer to get more veggies into my diet through spiralizing. Zucchini noodles galore.

Fast forward a month and I flew out to Chicago to check out the prototype Vegetable Sheet Cutter. After 5 minutes of playing with it, my mind was blown. I had recipes ideas bursting out of my brain and I couldn’t wait to put it to use.

A few weeks later I demo’d the Vegetable Sheet Cutter at the Housewares Convention. And to say it was one of the most talked about products of the show would be an understatement. Everyone was buzzing about it. So we shot a quick little video of it, put it up on Facebook and it went crazy viral.

If you’ve been following me for more than a year, I’m sure you remember it. I mean, I sliced a solid 8-foot continuous sheet out of one apple! Though you probably remember me talking about how unfavorable tradeshow lighting is – ha (see Facebook video).

But let’s talk about this amazing Vegetable Sheet Cutter. Because now having used it for nearly a year, I can honestly say I’m still in love with it as much today, as I was back then.

It’s not just a fancy novelty kitchen product that you’ll use once and shelve away. If you’re honestly looking for ways to eat more vegetables and transform traditional recipes into healthy, gluten-free versions – you’ll use this ALL the time.

What can you cut with the Vegetable Sheet Cutter?

You can cut a variety of soft and hard fruits and vegetables with the Vegetable Sheet Cutter. For fruits, you can cut apples and pears. For vegetables, you can cut zucchini, cucumber, sweet potato, russet potato, daikon radish, beets, yuca (cassava) and more.

Instead of making my sweet potato fries or yuca fries, you could make root vegetable chips.

With two blades, both a thin and thick blade, you can vary the thickness of the sheets. But to be honest, I usually use the thick blade as I figure a little more veggie in every bite is always a good thing.

Pro tip: for fruits and vegetables that oxidize quickly (i.e. apples and russet potatoes), soak the sheets in a bowl of lemon water until you’re ready to use them.

What are some Vegetable Sheet Cutter recipes?

I know it sounds cliche to say the recipe ideas are endless. But they truly are. Think of all the ways you might use a tortilla or flat pasta or even dough – because that’s when you can find a creative way to use this product.

I haven’t converted the recipes you see in the video into full recipes on this website yet. To be honest, I just whip them up on the fly. But if you’d like to see proper recipes with nutrition information, let me know. I’m happy to oblige.

I love your site, your recipes, and your cookbook.  I received a brand new Kitchen Aid mixer and sheet cutter attachment for Christmas.  I will add my voice to the other comments in asking if you could post recipes for using the sheet cutter.  I’m especially interested in learning how long the different sheets can be stored, both before and after filling (if they will be eaten without further cooking.)  Thanks so much!

    • What an amazing video! The low and slow for 2 hours sweet potato chips look amazing. Can you please share the approximate temperature? I saw in the other comments that you said you don’t have a totally vetted recipe yet but can you please give a general clue on the temperature? Thank you :-)

Lisa, this video compelled me to order the vegetable cutter – one for me and another for my ‘heart’ sister as a housewarming gift.  LUV IT!!!  I’ve used it frequently for my own version of zucchini lasagna.  I also make what I call stuffed zucchotti, which is ricotta/mozzarella filling in zucchini rolls instead of homemade crepes (manicotti).  Your video shows baked sweet potato chips that I want to make with zucchini due to many fewer carbs.  Would I still use the thin cutter?  What oven temp is low and slow?  How long should they be baked?  Any advice based on the substitution?  Thanks so much for your help.

  4. I just ordered one and received it from Kitchaid!! I am so excited!! I would LOVE as many recipes as you can create with this wonderful tool! I happened to buy some Delicata Squash last week and it has been looking at me waiting to be used. I am going to try it on one of those when I figure out what to wrap it around for an Italian dish. I am still immediately wanting all the cheeses but I am trying to follow Dr. McDougall, Grandfather of vegan eating based on very little to no fat, starches, and vegetables. Any additional recipes would be SO helpful!! Love your videos!!!!

    • I used sheet cutter with zucchini and had no problems. 
      Had a little problem with sweet potato- the plastic food holder popped out of sweet potato while spinning, but it ended up working. 
      But then I did butternut squash and it didn’t work at all. The squash came out of the food holder while spinning and broke two of the teeth on food holder, so it didn’t work at all. 
      I think I pushed the food holder all the way in to the vegetables. 
      Any suggestions?  Thanks!

  11. I am so ecstatic to have found your channel, I was recently diagnose with type 2 diabetes and I was not sure what I was going to do about food. I have been trying the simple recipes and also trying to do the meal planning but I have a small kitchen that i need to rearrange my space to make things work smoothly. But I am beyond glad to have you come up with all these ideas.
    Question, where did you purchase the attachment for the cores? I found the sheet cutter on amazon but the core blades are not the same as yours. Help!!

  12. Do you know if the Kitchenaid sheet cutter would fit onto a Kmix machine, as that’s what I have, and I’d love to have this sheet cutter to use.

  13. I have tried to slice a sweet potato but I have a few problems
    1) the side closest to the machine where the black holder goes.  When I turn on the machine my sweet potato does not turn. It just shreds in that area.
    2) this shredding happened with 2 out of three apples also
    3) how far into the vegetable or fruit does the long skewer go?

    • Hi Jacqueline – it sounds like you’re not pressing the food holder in far enough. If you don’t, it can definitely shred the edges of the vegetable/fruit. On soft items like apple, I press it in the whole way. On firmer vegetables like sweet potato, I usually press it in 50% or so.

  14. I tried to use the sheet cutter on eggplant but I couldn’t get it to work. The attachments ended up drilling a hole through the eggplant and the eggplant ended up not spinning or being sliced. 

    Did I do something wrong? Any suggestions?

    I’ve had success with zucchini and apples so far but eggplant was a fail.

    • I will hope to put the recipe up soon for those! And the sweet potato chips are baked at 350, however, you might need to play around with temperature as some oven heat warmer than others!

    • Hi Germaine – I hope you love the attachment! Unfortunately, you can’t slice eggplant because it’s too soft (I know, a bummer!). But there’s still many vegetables you can slice with it and my favorites are in the video. :)

  25. I would also love your recipes, in particular, the sweet potato lasagne. Can you prepare it ahead eg day or night before or does it have to be prepared, assembled and cooked at the time you need it? Also, does the bolognese sauce need to be watery for this vegetable to absorb it or best to be dry? How long do you cook it for? Any other tips? Thanks.

  33. Do you have a trick for removing liquid from zucchini? In particular for making lasagna, which can tend to get quite liquidy. I just saw the sheet cutter and am ordering it. Would love some recipes. Thank you.

    • Hi Linda – Not really, I just tend to make sure all the sauces I use in a lasagna are not overly liquidy. I’ll try to add more recipes in the future. :)

  35. I was so excited about the sheet cutter when I saw your video I instantly bought it and tried your chicken enchiladas recipe. The dish (and cheese) looked ready within 20 minutes, but the potatoes weren’t. Do you suggest maybe boiling the sheets beforehand?

  41. I have the vegetables sheet maker and loving it.I would love to have all of your recipes.You are right when you can say you can do anything you do with a tortilla. I made tacos using zucchini for the shells,they were great just fill them the same as you would a taco. I also made a zucchini Mediterranean wrap filled with roasted turkey breast,roasted red peppers,sliced cucumbers,sliced tomatoes,purple onion,baby spring mix greens sliced black olives and jalapeno hummus.

I would like to see the recipes for the meals mentioned in this post although I guess most of them I can figure out.   49. AMAZING! I am purchasing my first KA stand mixer, the 100 Anniversary Edition. I am researching the attachments as I want to minimize my kitchen gadgets. We are ketogenic eaters and this vegetable sheet cutter definitely solves our problem of being able to eat lasagne once again.   50. I saw the sheet cutter on a website last week, bought it and went to YouTube, saw your videos, and felt convinced I had another wonderful new kitchen tool. As many others have asked about the chicken enchiladas, that was my first interest but now I’ll have to wait for the recipe :(
    The first thing I made was the potato chips, using the thin blade and russet potatoes. As I was cutting them I had to put in a bowl with water to keep them from browning, blotted them, cut into various sizes, mixed with olive oil, salt and pepper. Baked at 425 about 15? minutes. They were delicious. You do want to watch that they don’t burn. 
    Anyway, I am anxious to try your recipes and look forward to many years of better eating.

    • Hi Suzanne! That’s great that you made potato chips with it! I usually bake my chips low and slow…about 250 for 30-40 minutes. That helps crisp them up without burning. And my chicken enchiladas recipe is coming to the website in January! :)
